WE found another amazing discovery at Walmart....Gluten free soup! And they are not too shabby! So it makes one of our 'staple' meals quite easy. We love cream of mushroom soup w/chicken over rice. Well regular cream of mushroom soup has wheat in it so we have to make our own cream of mush soup....well with the discovery of the soup at Wally world....we can easily make this now.
Here's how we make it:
2 boneless/skinless chicken breasts, seasoned with season salt, garlic & onion powder cooked, and then dice into pieces
2 cans of Gluten Free Cream of Mushroom Soup
(cook in the same pan the chicken was, add a little (1/2 can) of water to scrape off the yummy bits off the pan
4 Chicken Bouillon cubes crushed into the mix
3-4 Tablespoons of Sour Cream (if no sour cream, 2-3 T plain yogurt, with 2-3 T heavy cream
Mix all ingredients together, bring to a boil, then add about 1lb of cooked brown rice.
